Your training as a sushi chef
As part of the Familie Wiesner Gastronomie (FWG), you can train to be a sushi chef at Negishi Sushi Bar or even at Nooch Asian Kitchen.
What you bring:
- Passion and interest for Japanese cuisine
- Cook training or at least 2 years of experience in the kitchen
- Flexibility
- German language skills
- Work permit in Switzerland
- A cool character - you are friendly, customer-oriented, team-oriented

Nik about sushi chef training
Nik is employed by Familie Wiesner Gastronomie (FWG) and has been working at Negishi Sushi Bar since 2016. He started as a sushi chef apprentice at Negishi Sushi Bar in Winterthur, and now Nik is an operations assistant at the Oerlikon location.
Nik, why did you choose FWG?
Because I got the chance and the opportunity to train as a sushi chef at FWG, which is not possible everywhere in Switzerland.
What was the reason for the sushi chef training?
On the one hand because I love the art of sushi and making sushi is an art for me and on the other hand I could secure a job as a sushi chef.
What else do you have planned in the FWG?
In the FWG there is a very good working atmosphere, which is very important to me. At the FWG I have learned a lot and have progressed. In the future, I will also continue to train internally, improve myself, take responsibility and continue to learn.
Who do you advise sushi chef training?
If you love the art of sushi, want to go the way to become a sushi master and perhaps also want to make a career in the sushi world in the future, then I advise you to start with training as a sushi chef / sushi cook. Best of luck.
